The present utility model relates to a process for producing food grade products from citrus fruit by-products but more particularly, to a process of producing citrus products and by-products that utilizes all parts of the pomace like pomace, rind/peel and seeds. Said process comprises extracting juice from the citrus pulp/segments; extracting pectin from the seeds (for jelly and marmalade); preparing, sliced rind (for marmalade); and processing pomace puree (for jams, conserves and other food applications). |
