PURPOSE:To obtain mycelia of fungi belonging to the genus Tricholoma, e.g. matsudake mushrooms, useful for food, readily in large quantities, by incubating the fungi inoculated in a medium containing a starch in a high concentration according to the aeration spinner culture method. CONSTITUTION:Fungi, e.g. Tricholoma matsutake S. Ito IFO30588(FERN-P No. 4758) or Tricholoma bakamatsutake Hongo sp. nov. IFO30586 (FERM-P No. 4756), which belong to the genus Tricholoma, are incubated in a liquid medium containing 3W/V% of more, preferably 4-10W/V%, of a starch, e.g. rice, wheat, potato, or corn starch, at about 20-27 deg.C and an air flow of 10-150% for 20-60 days, preferably by the submerged aeration spinner culture method to give mycelia and culture comprising the aroma component. The component is then extracted and added to impart the aroma to food. |
