摘要 PURPOSE:To prepare a proteinous raw material having excellent nutritive value, taste, flavor, etc. and wide application field for food, at a low cost, by adding animal eggs to crustaceans such as krills, and grinding the mixture. CONSTITUTION:Animal eggs are added to krills or other crustaceans, and ground to fine particles. Prior to the addition of the eggs, the crustaceans are roughly crushed preferably at -20--15 deg.C. The animal egg is e.g. hen's egg, poultry egg, fish roe, roe in the body of krill or other crustaceans, etc. The amount of the animal egg is preferably about 10-30% of the krill or other crustaceans. In addition to the animal egg, emulsifying agents such as lectithin, animal or vegetable oil or fat, additives, diluents, etc. may be added to the krill. There is little discoloration and odor emission of the produced proteinous raw material even by leaving to stand for about 24hr after the preparation. It is supposed that the reaction of the autolytic enzyme in the crustaceans with the component of egg suppresses the autodigestion and exhibits the deodorizing effect.
