PURPOSE:To provide a food quality-improving agent containing an organic acid monoglyceride and an alkaline substance, and capable of improving the quality of a food which forms a partially neutralized product in use, especially the qualities such as age resistance, forthability, stability, etc. CONSTITUTION:The objective agent is composed of (A) an organic acid monoglyceride of formula (RCO- is the residue of a 12-24C fatty acid such as lauric acid, stearic acid, etc.; A is the residue of a polybasic carboxylic acid such as citric acid, tartaric acid, etc.) and (B) an alkaline substance such as alkali metal or alkaline earth metal hydroxide, alkaline earth metal oxide, basic amino acid, etc., e.g. sodium carbonate, potassium bicarbonate, etc. The amount of the alkaline substance is selected to give a pH of 3.8-6.3, especially 4.1-5.5 at 60 deg.C as an aqueous dispersion containing 10wt% of the acid-type organic acid monoglyceride. |
