The present invention provides crystallization-resis-tant emulsions of anethole comprising anethole, a continuous phase selected from the group consisting of water and water containing alcohol, an emulsifying agent selected from the group consisting of saponins and bile salts, and at least one triglyceride to retard the crystallization of anethole. The present invention further provides a process for preparing such emulsions comprising the steps of: (a) mixing said anethole ingredient with said emulsifying agent and said triglyceride; (b) thereafter adding said continuous phase to the mixture obtained in step (a); and (c) stirring the mixture to form the desired emulsion. |
