The method for the preparation of champagne provides for preparing a coupage and removing oxygen therefrom, preparing a fermented mixture on the basis of said coupage, champagnizing the fermented mixture in the presence of yeast, biogenerating the champagnized wine and subsequently filtering the champagnized wine which is effected on the biogeneration stage at a temperature and at a pressure appropriate to the final stage of the biogeneration. A material to be used for the filtration is characterized by such porosity that the size of pores is less than the size of a microorganism cell. |
