1522439 Bakery products containing soya grits SPECIAL FOOD CORP 18 Nov 1976 [19 Feb 1976] 48166/76 Heading A2B Bakery products, e.g. loaves, rolls, pretzels, are prepared by using debittered soya grits, the trypsin inhibitor in which has been substantially deactivated or removed. The grits may be bruised or crushed grains and may have a particle size of at least 0.2mm, e.g. 1-8mm. Protein, e.g. soy flour or soy protein flour, and wheat bran or pulses may be included. The total soy content of the dry ingredients may be 5-60, preferably 20- 40,wt.%. The total protein content may be about 16wt.%, but may be about 30wt.%, for dietectic purposes. |
