The invention relates to sulphiting wine in barrels. Sulphur dioxide in a reservoir 1 is transferred by means of the duct 10, the electrovalve 13, and one of the calibrated orifices 18 or 19 combined with the valve 20 or 21, to an injection tube 11. Under the nitrogen pressure which is gradually decreased at 22 and 23, at the end of the injection, optionally after mixing with nitrogen via 32, 33, the SO2 duct is purged by sending nitrogen via 27, first towards 10', 18 or 19, 20 or 21, 34, 11, then by discharging to the reservoir 1 via 13 and 10. All the problems linked to sulphur dioxide leaks are thus avoided by sulphiting wine. <IMAGE>
