Animal protein hydrolysate is prepd. Thus, 1kg cow bone with small amt, of flesh is washed with tap water, added to the equal amt, of water, autoclaved at 120≦̸C for 20min, cooled to 40≦̸C, adjusted with HCl to pH2.0, and treated with 0.05% pepsin(10000 units/g) based on the substrate for 3hr. The hydrolysate is adjusted with Na2CO3 to pH5.0 and treated with 0.03% lipase (13750units/mg) based on the lipid content for 1hr at 40≦̸C. The hydrolysate is adjusted to pH6.0, heated at 100≦̸C for 15min, cooled to room temp. and centrifuged. The supernatant is concentrated to give 460g protein hydrolysate. |
