The method consists in forming a confined atmosphere 6 around the foodstuffs 2 by wrapping them in a film of plastic material 3 which is permeable to gasses and to water vapour and by including in the said confined atmosphere a compound which, on contact with the water vapour generated by the breathing and sweating of the foodstuffs, is capable of releasing at least one bactericidal gas. The compound is divided into several charges each included in an individual sachet 8a-8c, the permeability to the bactericidal gas or gasses and/or to water vapour decreasing from one sachet to the next 8a-8b; 8b-8c, such that a relay effect is obtained in the release of gas. <IMAGE>
