A device for obtaining fruit or vegetables having facets of given profile consists of a tubular casing (1) provided with slits (3 to 6) which guide cutting means such as piano strings. An internal or external mobile crown moves the cutting means (9, 10) longitudinally. The invention also concerns an industrial installation in which such a device is used.
