Method for stabilising biological products by mixing them with a suppressive system based on salt and sugar, characterised in that it consists: - in using fresh biological products; - in adding to the fresh biological products of the order of one or one and a half times the quantity of water contained in these products, a composition of salt and sugar comprising; . a pulverulent mixture of dextrose and sucrose, in which the weight proportion of dextrose is of the order of three (3) to four and a half (4.5) times that of the sucrose, . and in which the weight ratio of sugars to salt is between 7 and 7.5; - and finally, in subjecting the whole, at ambient temperature, to a rapid and thorough grinding action so as to obtain a paste which is ready to use.
