The main object of the invention is to make provision for unhooking to take place without cutting the rear hoof tendon behind which hooking takes place. A device in accordance with the invention is placed at the downstream end of a lowering station. It comprises two pulling arms (8) in the path of the half-carcasses (C) on each side of the runway (3) for the gambrels (T), which arms (8) have the function of exerting, on the rear hooves, an unhooking pull pointing upwards and outwards. Associated with these pulling arms, means (12a, 12b, 14a, 14b) are provided to ensure correct positioning of the gambrels (T) when they arrive in the zone of action of the arms (8), namely their horizontality and their orientation perpendicular to the direction of forward travel. These means also immobilise the gambrels (T) upwards during action of the arms (8). <IMAGE>
