<p>A composition useful for enzymatically hydrolysing lactose in dairy products. The composition comprises a sonicated culture medium containing bacterial cells which produce lactase within the cells during culture. The bacterial cells are non-toxic to humans and compatible with dairy products. The bacterial cells are cultured and then ruptured by sonication to release lactase into the culture. The culture media may then be introduced to milk or other dairy products and incubated for a predetermined period of time to hydrolyse lactose.</p> |
