The method disclosed makes it possible to produce sheets of ice, in particular sheets for use in tests using models of ships or marine structures, the ice sheet having a texture (1235) which at least approximates that of a natural sheet of ice, and its deformation and failure characteristics reflect with substancial accuracy, on a reduced scale, the behaviour observed on ice sheets in nature. The method consists in producing an ice layer by disrupting the columnar growth (1230) of the ice by the introduction of finely particulate ice-growth nuclei (1202) into the water body in such a way that fine-grain ice (1260) is obtained through the whole thickness of the ice or in one or more layers.
