<p>Method of sorting vegetable products, intended for separating those (12) of the said vegetable products containing residues from harvesting, called residue-containing products, from those (11) of the said vegetable products lacking the said residues, called residue-free products. According to the invention, the said method comprises an operation of sorting based on density differences, consisting in introducing the said vegetable products into a separating liquid medium (40) whose density is between the density of the residue-free products (11) and the mean density of the residue-containing products (12), and in separating the vegetable products floating at the surface of the liquid medium from the vegetable products settling at the bottom of the said liquid medium.
