PURPOSE:To obtain noodles useful for alimentary therapy, such as patients suffering from renopathy, disorder of accessory thyroid, vitamin D cacochymia, patients suffering from osteoporosis, etc., with reduced contents of phosphorus and potassium, by using treated soybeans in which the contents of phosphorus and potassium are reduced to specific values or below. CONSTITUTION:Treated soybeans with respective <=11mg content of potassium and <=40mg content of potassium based on 1g protein are used as a raw material to provide the aimed noodles. Furthermore, such treated soybeans are produced by dipping soybeans in an aqueous solution at pH3.0-6.5 and eluting the phosphorus and potassium components in the soybeans into the above- mentioned aqueous solution. |
