The invention relates to an original device for closing and unclosing a bottle containing an effervescent liquid such as champagne. According to the invention, this device comprises means (8) which can vary the diameter of the plug or cork body (3) on at least one portion of its height and means (16, 17) for evacuating the gas compressed on top of the liquid before unclosing the bottle. These particular means provide for an effortless opening of the bottle and eliminate any risk of uncontrolled spouting out of liquid.
