The knife has a handle (4) to which a wire saw (5), made of tungsten carbide, is fixed. This is used to make a small cut at the edge of the oyster and towards its central part. A blade (2) is fixed to the handle and has a very thin end (1) which is put into the cut to make a small hole. The wider part of the blade has cutting edges which is put into the hole to lever the valves apart and to cut the muscle of the oyster.
