Molecular changes are made in starch (-containing) products by corpuscular irradiation while retaining the powder or granular structure of the starch. The irradiation beam can be accelerated or be pulsed by an electric field. The starch can be depolymerised or can be given activated sites for subsequent derivatisation. It can be etherified, esterified or graft polymerised before or after the irradiation.
