The invention refers to the food industry, particulary, to the process of stone-fruit kernels detoxication. The process of the stone-fruit kernels detoxication (plums, apricots, peaches cherries, sweet cherries) containing amygdalin (cyanglycoside) is carried out at boiling in the water having pH 7...8 and at a mass kernel water ratio of 1: (6...10) during 30...50 min. It is provided removing of the water after the boiling, drying, removing of the peel and the further reducing to fragments thereof. The technical result consists in the significant decreasing of the amygdaline content into the stone-fruit kernels, detoxication duration and dry substance losses. Claims: 1 |
