PURPOSE: A process and apparatus for producing raw soybean powder without loss of lipids is provided for removing the cowy taste of raw soybean and inactivating trypsin inhibitor to yield a high quality of raw soybean powder in industrial scale, as well as promoting fine milling without destruction of nutrients. CONSTITUTION: The process comprises the steps of: screening good soybeans; drying raw soybeans by hot air flow at 80°C with radiating far IR rays and then cooling them to 20°C; primarily milling them by ceramic pulverizer to size of 15-20 mesh; treating the primarily milled powders by using hot air flow with far IR rays to remove the cowy taste of raw soybean and inactivate trypsin inhibitor; secondarily milling them by ceramic mill to size of 80-100 mesh with blowing cold air at 5-10°C; tertialy milling them by ceramic mill to size of 150-900 mesh with blowing cold air at 5-10°C. Soybean powders consist of high quality of fine particles without cowy taste of raw soybean and loss of lipids |
