The apparatus comprises one or more evaporators (11) with liquid flowing down over tubes or plates. The liquid enters at the top (15) of the evaporator via a distributor (16) and the vapor is evacuated only from the top (14) of the assembly, after being heated by heat exchange along a route with decreasing cross sections (12). The vapor flows in the opposite direction to that of the liquid. The vapor/liquid separator (20) contains a dispersion and distribution device (22) at its top. The separator is cyclonic and is mounted in series with the evaporator on the vapor circuit, preferably mounted on top of the evaporator. The condenser (30) for vapor from the separator is a vertical installed surface type. The device receives vapors which are enriched in volatiles at its base in a distributor (31) or calander (34), with the condensate returning in back-flow. The apparatus includes a condensation capacity regulator, preferably operating on the flow of refrigerant liquid. The apparatus functions as a liquid degasser, or to separate out a more or less volatile phase, or both at once, at any temperature or pressure.
