PURPOSE: A method for producing soybean protein hydrolysates in high concentration from the defatted soybean flour(DSF) by hydrochloric acid hydrolysis followed by catalytic degradation is provided. CONSTITUTION: Catalytic degradation of soybean protein results in the gelation of soybean protein degraded during heat sterilization since a large amount of proteins degraded by catalysts are linked together. For inhibiting such gelation, a low hydrochloric acid solution is treated to the defatted soybean flour prior to degradation by protein catalyst, such as protease and peptide, to produce soybean protein hydrolysates containing 12% or more soybean protein. The soybean protein hydrolysates according to a method of the invention do not contain chlorohydrins which is a harmful material to human.
