PROBLEM TO BE SOLVED: To provide a process for the production of carotene crystal having high purity. SOLUTION: Carotene crystal having high purity can be produced by dispersing a carotene-containing material in a solvent compatible with hexane, filtering the dispersion, washing the filter cake and removing the solvent. The solvent is composed of one or more materials selected from hexane, acetone, ethanol, isopropyl alcohol, dichloroethane, trichloroethylene and trichlorotrifluoroethane and the dispersion is carried out at room temperature to 60 deg.C.
