摘要 PROBLEM TO BE SOLVED: To provide a food processing and cooking method and a food processing and cooking device capable of appropriately performing many types of processing including cooking, rice cooking, roasting, baking, drying, disinfection, thawing by combining appropriately three factors of steam, hot water and pressure. SOLUTION: A food processing and cooking method for carrying out processing or cooking of food by supplying either of saturated steam, superheated steam, and hot water or a combination them in a closed system which accommodates the food by predetermined timing and adjusting the interior of the system to a predetermined pressure higher than atmospheric pressure. Therefore, a food processing and cooking device formed as a closed system provided with a container 2 in which food is stored, a steam generation section 3 connected to the container 2 and supplying saturated steam or superheated steam, a hot water generation section 4 connected to the container 2 and supplying hot water, a pressure regulation section 5 that regulates the pressure in the container 2 to a pressure higher than the atmospheric pressure and that puts saturated steam or superheated steam in the container 2 and from the steam generation section 3 and hot water from the hot water generation section 4 into an oxygen-free state.
