FRUIT BEVERAGE CONTAINING FRUIT MEAT OF CRUSHED SWEET PERSIMMON AND PRODUCTION THEREOF

PURPOSE: A process of preparing the titled beverage by crushing a sweet persimmon to a specified size after removing seed thereof, heating and then degassing is provided. Whereby, the product has simultaneously excellent chewing and drinking feel as a beverage. CONSTITUTION: A sweet persimmon whose skin and seeds are removed is crushed to a size of 1 to 5mm to produce a beverage having a fruit meat content of 1 to 50%, an acidity of pH 3 to 4. The beverage is then heated at 70 to 100deg.C for 30 sec to 10 min and degassed to give a beverage having a fruit meat whose central temperature is 85 to 95deg.C and Brix is in the range of 10 to 25 degrees.
