PURPOSE: A method for penetration of an effective material into cuttlefish meat within a short time without the reduction and destruction of nutrients using an ultrasonic wave distributor is provided which can produce a variety of cuttlefish products, together with a meat quality improving effect and a sterilizing effect. CONSTITUTION: An oscillator of an ultrasonic wave distributor is operated to irradiate an ultrasonic wave having a frequency between 20 to 28MHz, cavitation bubbles of 25,000 to 30,000 rounds per second are generated to penetrate an effective material such as Chinese herbal medicine extracts, preservatives, spices and other functional additives into cuttlefish meat for 10min. The strong ultrasonic wave causes softness and tenderization of the cuttlefish meat by increasing the activation of cells and absolute sterilization of fungus and bacteria. |
