PURPOSE: Functional rice having an outer coating layer containing an extract of Acanthopanax Senticosus Var. Koreanus is provided. The quality of the surface appearance, color and taste of rice are hardly changed prior to cooking while activating liver function excellently. CONSTITUTION: The functional rice has an outer coating layer containing the extract of Acanthopanax Senticosus Var. Koreanus and Polygonatum odoratum(Miller) Druce var. pluriflorum (Miquel) Ohwi, wherein the rice is selected from the group consisting of polished rice, unpolished rice, 50% polished rice, polished glutinous rice, unpolished glutinous rice and black rice. The extract of Acanthopanax Senticosus is prepared by extracting Acanthopanax Senticosus in ethanol at 50 to 80deg.C and then concentrated to a 8 to 12 Brix. 0.01 to 2% by weight of the extract of Acanthopanax Senticosus based on the weight of the rice is coated on the outer skin of the rice. |
