FIELD: food industry. ^ SUBSTANCE: invention refers to process of manufacture of canned compotes. The method consists in preparing recipe components, in cutting, in drying chicory in SHF field at specified parametres, in roasting and crumbling of chicory, in roasting rye grain, in mixing chicory and rye grain at weight ratio 7:3, in extracting of produced mixture with drink water and in filtering of produced extract at specified parametres of the process, in preparing syrup on its base, in pre-packing raspberries and syrup, in hermetic sealing and sterilising. ^ EFFECT: facilitating production of canned compote with coffee taste and aroma nuances on base of non-coffee recipe, simplification of process, and reduction of softened berries contents in desired product while maintaining its shelf life. ^ 1 tbl |
