After initial heating to liquefaction in a first section the chocolate mass is cooled to approx the crystallization boundary zone after which it is pumped to the coating machine along a pipe with a thermostatically regulated circulating liquid heating jacket for a gentle rewarming to the max permiscible temp. to produce a smooth, shiny coating of the chocolate centres. The transit time of the chocolate along the jacketed pipe, is determined to at least two mins by the dia and length of the pipe. Relatively cheap, accurate temp regulation.
