1364596 Flavourings INTERNATIONAL FLAVORS & FRAGRANCES Inc 12 July 1972 [12 July 1971] 32623/72 Heading A2B A meat flavouring includes an α-ketothiol having the formula R 1 -CO-C.SH-R 3 where | R 2 R 1 is CH 3 ' or C 2 H 5 ' and R 2 and R 3 are H', CH 3 ' or C 2 H 5 '. The preferred ketothiols are 2-mercapto-3-butanone and 2-mercapto-3- pentanone. A flavouring composition may include 0.1% to 90% by weight of α-ketothiol, together with a flavouring adjuvant which may be a further flavouring material, a carrier, a stabiliser, a thickener, a surface active agent, a conditioner, or a flavour intensifier. The ketothiol in an amount of from 0.001 to 10 ppm may be added to a foodstuff. |
