A supersatd. aq. soln. of saccharose contg. a volatile flavouring- and aromatising agent is crystallised so that =0.5% of the flavouring agent is fixed in the crystals, and the crystals are then dried. The process is esp. useful for fixing, e.g. =0.3% acetaldehyde into saccharose crystals esp. to reinforce natural fruit flavours. Pref. the acetaldehyde is added to supersatd. sugar soln., which is then seeded to encourage crystallisation, which may be carried out under pressure. The resulting crystals are recovered and dried to leave most pref. 0.2-0.3% fixed flavouring agent in the sugar. |
