PURPOSE:To prepare a pickle bed (or a liquid for immersing vegetable) by fermenting a mixture of boiled qlutionous rice, and specific amounts of malted rice, salt and sake lees, for several days, and to obtain palatable vegetable pickle in a short time by embedding (or immersing) the vegetable in the bed. CONSTITUTION:5-13 parts by weight of glutinous rice is washed and boiled, and thoroughly mixed with 5-13 parts of malted rice and salt. After cooling the mixture, it is mixed with 0.01-0.5 part of sake lees and let to stand for 2 days in a sealed vessel to obtain a pickle bed. Vegetable pickle can be prepared easily and in a short time, only by immersing a desired vegetable in the pickle bed. The vegetable pickle thus prepared can be stored for a relatively long period. |
