PURPOSE:To improve the taste, enhance the sweetness and make it possible to use the titled juice for food, by bringing the juice obtained from a rind of a citrus fruit into contact with active carbon to purify the juice. CONSTITUTION:A rind of a citrus fruit is crushed and pressed to give a rind juice containing solids. 10wt% milk of lime in an amount of about 2wt% based on the weight of the rind is added to the juice, and the mixture is centrifuged to give a fruit juice without the solids and pectin. Active carbon in an amount of about 1wt% is added, and the resultant mixture is agitated and filtered to obtain a juice of light color and improved taste. The juice is then subjected to the ion exchange treatment, e.g. passing through an ion exchange resin column or electrodialyzed to further improve the taste. Thus, the juice having sweetness without bitterness can be obtained from the juice having the sweetness with remaining bitterness. The rind which has hitherto been used for feed or disposed can be utilized effectively. The treatment with active carbon permits the reduction in load of ion exchange, dialysis, etc. |
