PURPOSE:Rice cake bun is made by using a mixture of pressed barley and rice powder to make the coating and by stuffing it with ''an'' a kind of jam, such as sweet bean jam, thus being palatable and rich in nutritions. CONSTITUTION:Pressed barley is cooked into a gruel and kneaded together with a powder of unpolished or polished rice to prepare the coating. The coating is expanded to an appropriate thickness and stuffed with ''an''. Then, they are friend with oil or steamed. As ingredients for ''an'', are used vegetables, beans, fruits, mushrooms, meats and sea weeds and as seasonings, sugar, ''miso'' (soybean paste), soysauce or curry. |
