<p>A cutting mechanism for crusty rolls and similar pastry acts on the lumps of dough as they leave the kneading station in the swing buckets of an endless horizontal conveyor. Near the return drum of the conveyor a set of circular blades, arranged in a rocking frame, is lowered by a crank mechanism in synchronism with the stepper drive of the conveyor, to complete the incisions in the top of the lumps of dough. This is a simple mechanism which can be readily added to existing plant.</p> |
