PURPOSE:A tank is reduced in pressure and stirred by introducing air bubbles into the tank to effect uniform seasoning of a food product. CONSTITUTION:Cages containing food products to be processed are placed in the tank 1 and the cover 3 is closed. The seasoning solution is fed through pump 16 and steam is sent into the double-walled bottom 10 to heat the bottom 1b. At the same time, a vacuum pump is driven to evacuate the inside of the tank 1 through hose 6. The valve 23 is opened to introduce air through the cleaner 24 and the annular pipe 20 within the tank 1 and the air bubbles 25a stirrs the inside of the tank. |
