PURPOSE:Raw meat, into which more than a prescribed amount of sugar solution is injected, is heated, sliced, dried to produce dried meat readily restorable with water inexpensively. CONSTITUTION:A sugar solution, preferably of higher than 50wt% concentration, is injected with a needle into raw meat such as pork shoulder, ham or loin, and more than 5wt% of sugar is contained. Then, the above raw meat is packed in a casing, heated, sliced less than 3mm. thick and dried to give the objective dried meat. This process gives dried meat of 7-15wt% water content by only-air drying at about 40-90 deg.C for 15-180min without freeze drying. |
