PURPOSE:To prepare Chinese noodles having strong toughness and elasticity, beautiful yellow color and excellent preservability, and free from drooping, by adding powder of active calcium originated from shell. CONSTITUTION:Powder of active calcium passing through a 150 mesh sieve is prepared by pulverizing the shell of oyster, scallop, etc. and calcining at a high temperature to effect the activation. The active calcium powder is added to the wheat flour used as a raw material, at a rate of 0.1-0.3wt%. |
