PURPOSE:To provide a seasoning composition having strong antiphostaphase activity, by mixing sodium 5'-inosinate or sodium 5'-guanylate with an inorganic calcium salt and L-glutamic acid at specific ratios. CONSTITUTION:1 mole of sodium 5'-inosinate and/or sodium 5'-guanylate is mixed with 0.5-2 moles of an inorganic calcium salt such as calcium carbonate, calcium hydroxide, etc. The mixture is mixed with a small amount of water, kneaded with 0.5-200 moles of L-glutamic acid, and if necessary dried to obtain the objective composition. |
