The process comprises (a) pumping the matl. from a storage vessel through a pref. vertical cylindrical reactor into a lower heating zone maintained, by liq., at a temp. sufficient to initiate coagulation of the proteins in the matl., and (b) advancing the matl. to a reaction zone situated above the heating zone at a constant or slightly falling temp. for the completion of the protein coagulation. Pref. heated liq. can be supplied to or withdrawn from posns. in the heated zone of the reactor such that the hot liq. flows. in one section of the zone in co-current and in a further section in countercurrent with flow of the raw matl. through the reactor. The feed and discharge positions are interchangeable. The system gives an easily regulated, continuously operated cooker in which rate of flow, temp. pressure, pH, etc. can be controlled. No burning-on of solid deposits on very hot heat exchanger surfaces can arise. The appts. is easily cleaned and being vertical requires min. floor space. |
