PURPOSE:To prepare a noodle ingredient having low content of air and a small dissolution amount during boiling, providing tasty noodles having good toughness and hardness to masticate, by kneading raw material flour with water under reduced pressure. CONSTITUTION:A given amount of flour and water are fed to the mixer 1 (the sign 2 is cover for sealing), kept at a fixed temperature by the jacket 10. While the mixer 1 is kept at about 400-700mm. Hg by operating the vacuum pump 7 and by the pressure control valve 8 (the sign 9 is vacuum indicator), the flour is kneaded with water by rotating the agitating shaft 3 by the motor 6, to prepare a noodle ingredient. |
