PURPOSE:To obtain the titled food having excellent quality, by using a water-soluble film-forming substance, an oil or fat, and water as main components, and forming the mixture with an extruder under high temperature and pressure, thereby carrying out the simultaneous molding and cutting of an oil or fat dispersion resistant to the separation of the oil during the preparation process. CONSTITUTION:A water-soluble film-forming substance (e.g. albumin), an oil or fat (e.g. soybean oil, etc.) and water are used as main components. The oil or fat is dispersed in the above components, and the resultant oil or fat dispersion is extruded with an extruder furnished with preferably >=2 screws, under high temperature and pressure, preferably while applying vacuum of <=-630mmHg in the course of extrusion, and the molded product is dried to obtain the objective food. EFFECT:The labor of predrying can be saved, the breakage of the food in the cutting process can be prevented, and if necessary, the hardness of the food can be continuously adjusted by controlling the degree of vacuum. |
