PURPOSE:To obtain an aspartame-containing liquid sweetener having excellent storage stability and sweetness and low cariogenicity, by dissolving aspartame in a concentrated liquid sugar alcohol heated at a specific temperature and cooling the solution. CONSTITUTION:Aspartame and sodium tartrate are dissolved in a concentrated liquid sugar alcohol (preferably reduced saccharified starch having a DE value of 30-50 before reduction) heated at 50-110 deg.C and the solution is cooled to obtain the objective aspartame-containing liquid sweetener. The amount of sodium tartrate is preferably 10-300wt% of aspartame. |
