摘要 PURPOSE:To obtain packed rice cake which can be easily reconstituted, in a short time, by adding starch having hardening-promoting effect such as soluble starch to glutinous rice or a mixture of glutinous rice and glutinous rice starch, converting the obtained mixture to a rice cake having specific water-content and gelatinized starch content and keeping the cake in cold state to effect the hardening of the cake. CONSTITUTION:Glutinous rice or a mixture of glutinous rice and glutinous rice starch is used as a main raw material, washed with water, immersed in running water over a night, drained and added with 0.5-5.0% starch having hardening-promoting effect such as soluble starch, gelatinized soluble starch powder, nonglutinous rice starch, cyclodextrin, etc. The mixture is spread on a tray and hardened by storing in a thermostatic chamber at 0-20 deg.C for 5-15hr. A sheet-like rice cake having a water-content of 46+ or -6% and gelatinization degree of starch of >=80% can be prepared by this method. The objective packed rice cake is produced by shaping and cutting the rice cake sheet and packaging with a laminated film composed of nylon and polypropylene, etc.
