<p>PURPOSE:To prepare pickles keeping stable quality throughout the year, by putting a pickling raw material and an additive such as seasoning in a pickling tank having heat-insulation property, placing a weight on the charged material and cooling the content of the pickling tank by passing a refrigerant through a cooling pipe arranged in the tank. CONSTITUTION:A pickling material and an additive such as seasonings are put into a pickling tank 1 furnished with a heat-insulation function and are topped with a pressing means consisting of a weight 9 integrated with a pressing lid 6 and a cooling tube 7. The cooling tube 7 is connected to a refrigerant- supplying apparatus 3 via a flexible pipe 10. The pickles are agent at 0-10 deg.C using the above cooling means.</p> |
