A broiled fish having a hardness of 105-1250g is enclosed in a sterilized vacuum retort package. The package is of a flexible material and the fish is vacuum-packaged so that the flexible material substantially conforms to the shape of the fish. A retort sterilization ensures that the fish is packaged with a high degree of adhesion. The package prevents breakage of the fish body and sepn. of the epidermis.
