Device consisting essentially of: a hopper which receives the olives to be washed, a movable channel into which the hopper opens out and in which the small, denser impurities are separated out, a series of buckets which convey these impurities from a water tank to a discharge hopper, a bell jar for subsequently receiving these olives still mixed together with the lightweight, larger impurities, a siphon which therein separates out the olives, conveyed to an outlet, from the water which passes on to a recovery tank, for recycling, and sprinkler nozzles for washing the fruit with water. The device is characterized in that it also comprises: a mechanism for extraction of the floating bodies, a device for filtering the recycled water, automatic cleaning means, namely valves for discharging the sludges from the principal tank and from the recovery tank, siphons in the discharge channel (chute) for increasing the yield of the assembly and sensors for controlling the flow of water and the minimum and maximum levels of water in the tanks, as well as a motorized pump unit. <IMAGE>
