Nonalcoholic refreshing beverage is obtd. by treating a conventional malt drink or an aq. extract of pts. of one or more plants, which are harmless toxicologically and in food chemistry and contain a N source for nutrition of micro-organisms, with glucose or a sugar contg. glucose; treating the soln. with a micro-organism which can convert glucose to gluconic acid; fermentation with at least occasional aeration; stopping fermentation; and, if desired, filtering and/or carbonating the fermented soln. Nonalcoholic refreshing beverage consists of a vegetable kvass contg. caffeine, which is diluted with 0-20, esp. 0-8 vol.% water and carbonated. It contains less than 0.5 vol.% EtOH and had pH less than 3.0 esp. 2.5-2.8 before carbonation and dilution. The claims also cover the kvass for making this beverage and the prodn. of the beverage. USE/ADVANTAGE - The beverage is produced entirely from natural starting materials by biological fermentation and acidification is unnecessary.
